General

Most system past like 2010 run UEFI, so go ahead and do UEFI install. But if the system boots into _ symbol blinking with no output, or you where smart and checked /sys/firmware/efi directory - tough luck, you got legacy boot on your hands.

UEFI installation

Straight forward - you need a vfat partition, around 512 - 1000 MB to store your boot data. You can also look into /sys/firmware/efi/fw_platform_size, which will return 64 for x64 UEFI or 32 for 32-bit IA32 UEFI. Later is only supported by systemd-boot, or so I've heard.

Legacy installation.

Either use MBR (ass), or on GPT create a BIOS boot partition - 1-2 MB partition used to store some legacy BIOS boot code. MBR had this baked in, but on GPT you need to create it explicitly. FS for this partition probably should be vfat. Some distributions work with GPT, on some it's easier to just do MBR. Don't forget to install grub dumbass, boot.loader.grub.device = "/dev/disk/by-id/ata-xxx" on NixOS.
